Okui Kaiseido Rishiri Kombu is preserved and aged in a special Kombu aging cellar for at least 2 years at the appropriate temperature and humidity using the Kuragakoi technique similar to that of wine preservation. The process minimizes the sea odor and brings out the delicious umami flavor. Great for making Dashi.
